Asian-Inspired Broccoli Cabbage Soup
This recipe is incredibly complex for how easy it is to make! It’s super flavorful and rich with a nice depth of flavor. I use an Instant Pot to make this, and I‘d definitely recommend this kitchen utensil if you enjoy eating soups, curries, chilis, etc. It cooks food super quickly! It’s still crazy to me that I can make a developed, complex soup in under 30 min. If you’re making this soup on the stove, I would probably steam the Brussels sprouts and broccoli first and add them to the soup partially cooked, but otherwise you can really throw all the ingredients into the Instant Pot together at once and cook until the green beans are tender.
Ingredients1 Instant Pot
32 oz Trader Joe’s ginger miso broth 1 cup coconut milk 2 tbsp Thai sweet chili sauce 14-16oz (1 pound) Brussels sprouts 14-16oz or 1 large head of broccoli, cut into large florets ½ cup frozen green beans ½ cup frozen green peas 1-2 Thai chilis, dried (very spicy, please use mindfully) 1 tsp garlic powder 1 tsp onion powder 1 tsp ground ginger Optional: rice (I used black or Thai rice) your favorite noodles corn and carrots would also be good in this recipe |
Instructions1. Wash the Brussels sprouts and broccoli.
2. Trim the Brussels sprouts to remove the stem and cut each sprout in half. 3. Add the Brussels sprouts, broccoli, and 1 cup of miso broth to the Instant Pot, pressure cook for 3 minutes. 4. Very carefully, very veryyyy carefully manually release the steam. 5. Once steam is fully released, add the remaining broth, coconut milk, and sweet chili sauce and stir. 6. Add the frozen veggies and the seasonings, stir. Break up the Thai chilis with your hands (be sure to wash your hands after, and don’t touch your face!) Adding one of these chilis will make a notable difference in spice intensity so please use them sparingly! Two chilis would make the soup HOT (I like 1½ chilis in mine). 7. Set Instant Pot to “soup mode” for about 10-15 mins to bring soup to a boil, then turn off the Instant Pot and set to “keep warm.” 8. If using noodles or rice, cook separately and add to finished soup at the end. 9. Eat mindfully and with gratitude |
